I took a week off and spend my vacation at NYC. It's been very nice week, I was able to forget about work and free my mind.
The highlight of the trip I went to see

The MET and shopping of course. During my shopping, many of the store doesn't accept taking photos anymore... I was disappointed by that. Soho's shopping district has beautiful interior designs, exclusively for Soho. If I knew this before hand it would of been less difficult for me to carry my SLR and my shopping bags through out the day...
I'll take my time to post photos I took. But for now, I need to adjust my mind to my normal life.

Sandwich is one of my favorite food. I eat plain sandwich almost everyday for lunch. Once in a while I treat myself with gourmet sandwich at local restaurant.
Here is simple sandwich I made over the weekend:
- 3 finely sliced bread, toasted with lightly brushed butter
- couple of roasted cherry tomatoes
- 1 sunny side up egg
- optional: slice cheese
Stack all together and have it with fresh OJ!

I was always curious to make grilled zucchini and eggplant roll that I see in cook books. I didn't have a recipe but it turned out well.
The stuffing has roasted cherry tomatoes and caramelized onion with grated parmasean.

Sometime I forget I bought bananas for healthy eating and then it ends up sitting on the counter turning all brown(Then I peel all of them and freeze them).
So this time, instead wasting it I baked some
banana muffin! Except I used banana bread recipe and pour into muffin tray. On top of that, while I was mixing the ingredient I realized I didn't have enough flour. I was missing a cup of flour..... So as a replacement I used 1 1/2 cup of rolled oats.
It still turned out really good, I was happy about it! I topped my muffins with leftover blueberries~

I found this idea from Pinterest but I can't seem to find the photo to show it to you.... The original photo looks so much better!
It looked simple and pretty to make so I tried one for myself. You finely slice a potato but don't cut it all the way. Sprinkle with sea salt, pepper, herbs and drizzle with olive oil. Bake for 45-60min(or until it gets soft) at 325F. Sprinkle with fresh grated Parmesan cheese.
