grilled zucchini + eggplant
I was always curious to make grilled zucchini and eggplant roll that I see in cook books. I didn't have a recipe but it turned out well.
The stuffing has roasted cherry tomatoes and caramelized onion with grated parmasean.
Oh wowzers!! That looks so amazing!!! :D I want to try making that too! Was it difficult preparing the eggplant?
