This is a dish I make when I have random leftover vegetables in the fridge.
I usually buy whole bag of carrots, only use half of cucumber packs, or peppers that's just sitting there. It's easy and quick to make, you can even make bigger batch for dinner next day!
You can always use other vegetables like grape tomatoes, radish, broccoli, cabbage, etc.
Ingredient:
- 6 mini peppers, sliced
- 3 mini cucumber or half cucumber, sliced
- 2 carrots, shredded
Dressing:
- 1 tbsp vinegar
- 1 tbsp soy sauce
- 1/2 tbsp sesame oil
Optional:
- 1 green onion, minced
- crushed sesame seeds
- ground pepper
1. With your choices of vegetables, slice them all up and pour into a medium bowl that you can easily toss.
2. Make the dressing following the ingredient.
3. Pour the dressing into the vegetable bowl.
4. Optional: add green onion, sesame seed, ground pepper
5. Lightly toss, or mix all the ingredient with wooden spoon.
6. You can serve immediately, or stir every 15 min until flavor fuses to each other.
